When Pooja Bavishi decided to establish her ice-cream business, Malai, she had the clarity of her own personal goals. "I created Malai because I wanted to honor the tastes that I grew up eating as a first-generation Indian American in a popular and mainstream way," she says.

"Everyone is a victim of an ice cream moment from their childhood which is usually related to visiting an ice cream shop in the neighborhood store for a scoop with loved ones," Pooja says. That infusion of nostalgia has taken Malai from a stand at local food halls and markets into freezers at grocery stores, pop-up carts around New York City, and a bustling flagship location in Brooklyn providing both local and national delivery.
